Macaroni & Cheese

1lb Elbow Macaroni or Cavatappi
½ cup Butter
½ cup Flour
1 teaspoon Salt
½ teaspoon Pepper
½ teaspoon dry mustard
½ teaspoon Worcestershire Sauce
4 cups Milk
4 cups Shredded Cheese (Mixture of Cheddar, Monterey Jack, Mozzarella…)


1.      Cook Macaroni as directed on Package
2.      Melt butter in a saucepan over low heat
3.      Whisk in flour, salt, pepper, mustard & Worcestershire sauce.
4.      Cook over low heat, whisking constantly until mixture is smooth and bubbly.
5.      Stir in milk, starting with a little at a time until it is incorporated into flour mixture. 
6.      Heat until boiling, whisking very often.  Mixture will thicken as the milk heats up.
7.      Boil and stir for a minute.
8.      Remove from heat and stir in all of the cheese.
9.      Drain macaroni and stir into the cheese mixture.
10.  Pour into a pan and serve.
